Μελομακάρονα χωρίς ζάχαρη σε μια εκδοχή για όσους έχουν αυτόν τον σημαντικό περιορισμό στη διατροφή τους. Σε αυτή τη συνταγή η ζάχαρη αντικαθίσταται από την στέβια και στη ζύμη και στο σιρόπι με το γευστικό αποτέλεσμα να μην έχει διαφορά από τα παραδοσιακά μελομακάρονα! Προετοιμάζουμε την κουζίνα μας και ξεκινάμε!
Γα τα μελομακάρονα χωρίς ζάχαρη θα χρειαστείτε:
- 1100 γρ. αλεύρι για όλες τις χρήσεις
- 300 γρ. ελαιόλαδο (ελαφρύ)
- 300 γρ. ηλιέλαιο
- 50 γρ. κονιάκ
- 160 γρ. χυμό πορτοκάλι
- 20 γρ. στέβια
- 1 κ.γ. σόδα
- 1 κ.γ. γαρύφαλλο τριμμένο
- 2 κ.γ. κανέλα
- 2 κ.γ. μπέικιν πάουντερ
- καρύδια σπασμένα
- 2 πορτοκάλια (ξύσμα)
Για το σιρόπι των μελομακάρονων
- 250 γρ σιρόπι αγαύης
- ξύσμα μανταρινιού
- ένα ξυλάκι κανέλα
- 2 γαρίφαλα
- 100 γρ χυμό μανταρινιού ή πορτοκαλιού
- 100 γρ νερο
Μελομακάρονα χωρίς ζάχαρη – Συνταγή
- Βάζουμε το ελαιόλαδο,το ηλιέλαιο, το κονιάκ, την ζάχαρη, την κανέλα, το γαρύφαλλο και το ξύσμα πορτοκαλιού στο μίξερ και τα χτυπάμε με σύρμα χειρός μέχρι να ομογενοποιηθούν.
- Διαλύουμε την σόδα στον χυμό πορτοκαλιού και την ρίχνουμε στο μείγμα (λίγο προσοχή γιατί θα φουσκώσει!).
- Ανακατεύουμε με το σύρμα, ρίχνουμε μέσα το αλεύρι σταδιακά σε 2 με 3 δόσεις και το baking powder και ανακατεύουμε απαλά μέχρι το μείγμα να γίνει ένα.
- Πλάθουμε τα μελομακάρονα και παρατηρούμε αν στο χέρι μας μένει λίγο λάδι. Αν ναι τότε είμαστε στο σωστό δρόμο! Φτιάχνουμε το σχήμα και μέγεθος που θέλουμε (περίπου 30γρ.) και ψήνουμε για περίπου 25’ λεπτά σε προθερμασμένο φούρνο (στους 160 βαθμούς στον αέρα) μέχρι να ροδίσουν και να γίνουν τραγανά.
- Βγάζουμε από τον φούρνο και τα αφήνουμε να κρυώσουν τελείως.
Σιρόπι χωρίς ζάχαρη για μελομακάρονα
- 250 γρ σιρόπι αγαύης
- ξύσμα μανταρινιού
- ένα ξυλακι κανελα
- 2 γαριφαλα
- 100 γρ χυμό μανταρινιού ή πορτοκαλιού
- 100 γρ νερο
Εκτέλεση:
- Βάζουμε όλα τα υλικά σε μια κατσαρόλα και από την ώρα που θα πάρουν βράση, βράζουμε για 3 λεπτά.
- Αφαιρούμε από τη φωτιά, χαμηλώνουμε την ένταση στο 1/3 της εστίας και βάζουμε ξανά την κατσαρόλα ώστε να διατηρήσουμε καυτό το σιρόπι μας.
- Τα βουτάμε στο σιρόπι περίπου 20 δευτερόλεπτα από κάθε πλευρά. Πασπαλίζουμε με φιστίκι ή καρύδι.
